My version of a fruit salad


Growing up, one of my favourite quick dessert was: fruit cocktail in syrup with nestle dessert cream.

Quick and easy to put up, and an absolute sweet treat.

Now that I am grown-up (no pun intended), I have come with the brillant idea to put up a fruit salad of my own, rather than using the overly sweet canned fruits. Also, instead of the dessert cream, I used greek yogurt. The result is a healthy and nutritious dessert.

Throwback in the kitchen

This week was quite a healthy one (if of course you do not count the domino pizza which we had on Friday eek). I have heard a lot on quinoa, about how it is super nutritious, rich in protein (and what else- just know it's a super food). Well I tried in for the first time last week, through sunrice- you know the ready-made rice packets (they are definitely handy). It tastes surprisingly good (just quite like normal rice actually). So, when I save up a lil (they are quite pricey for sure), I will buy the seeds and cook it . I have seen how it is cooked already and it takes only 15 minutes.

Apple Rhubarb Crumble

My first time making a crumble. I can't believe I have waited for so long to make one (and yes I'm not going to ramble about how it's never to late to try something new etc). I mean I have seen plenty of videos on how to make it-thanks to Ready Steady Cook (and all the crumble toppings are pretty similar yet not the same) and it's not that complicated. Actually it's very easy. I guess I was simply waiting for the right time. Right it's all about timing, isn't it.
Anyway, my crumble topping is a mix of:
-1/2 cup rolled oats
-2 tbs desiccated coconut
-1 tbs maple syrup
-1tbs coconut oil
-Silvered almonds
There you go with my healthy eating, which explains my choice of ingredients.
As for the filling I choose apple and rhubarb. It was also my first time trying rhubarb and I quite like its taste, it is unexpectedly acidic. Apple and rhubarb make such a great combination: I took the right decision. I cooked the rhubarb a little with some lemon juice, sugar and water (each about one tablespoon) before but I think it was not necessary at all. I was happy with the end result.

Avocado sandwich with ham and tomato

Seriously, this is the best sandwich ever. I mean so much goodness in those lovely avocados and tomatoes. Great food. When I think of those fast food, nothing can definitely beat home made dishes. They are fresher, healthier and cheaper options.

Chicken broccoli & snow pea sautee

After reading and coming across so many articles taking about eating green vegetables, I felt obliged to cook some. I have not been cooking broccoli for a long time, so it was about time to rectify this mistake. Health benefits of broccoli include strengthening bones, protecting your heart, controlling blood pressure,  saving eyesight and combating cancer. I also added snow peas, which is also a super veggie.
The dish is a complete meal, vegetable, protein, fibre and carbohydrates (accompanied with rice). My advice is to try having at least one green vegetable in your meal daily. It is definitely worth it.

Zucchini squash bites

It has been a long time since I wanted to try this dish. I found the recipe on this site. It is a very simple dish and healthy (basically no oil and baked) and trust me also tastes good. They are definitely perfect for snack time or even as a side dish.

I topped my bites with cheddar cheese and accompany them with beef pies
Oh yes, I also put some (ready-made) pie (Mrs Mac's)  in the oven to accompany the bites. Mind me, I have not reached the stage of making pies. This is in my agenda though. I really want to make my own pies. Someday...
